Food Adventures - Beef Roll

When Ryan and I visited home at Christmastime 2 years ago, Ryan fell in love with my mom's beef roll.  So last year spring we decided to try and make some, but it turned out completely disgusting and nasty. (Think really burnt browned beef with peppercorns)  We couldn't find the correct Morton's tender quick, so we tried some other generic meat tenderizer that was supposed to work.. it didn't.

Needless to say, when we were walking through our local supermarket a couple of months ago we ran across the correct 2lb bag of Morton's tender quick!  We quickly bought 4lbs worth (because I was pretty sure mom had run out), and we didn't want to not be able to find it again.  So over general conference weekend we made some beef roll to go with our spaghetti.  It was soooo good.   I had to hide half the loaf for lunch the next day, so that we wouldn't eat the entire pound of beef in about 20 minutes.  We're in the process of making more now, but here are some pictures just to whet your taste buds!

Finished beef roll, just out of the foil.

Ryan couldn't wait to eat some..

See?!  He has his mouth full of cracker and beef roll already.

Unfortunately it had a pretty big hole in the middle of it, but that didn't stop us from eating it!
