Food Adventures - Rhubarb Marmalade

There's ruhbarhb out by the back fence and nobody ever touches it, so we stole some.  We got a recipe from the internet for jam.  It's just sugar, roobarb, and an orange.  It tastes pretty good, but we cooked it down a little too far.  It's like concrete, so you gotta put it in the microwave for a few seconds to warm it up and make it spreadable.  Had some toast this morning with it. It's good.

*** I think I'll leave what Ryan decided to share with you.  It is really good jelly/marmalade, but I think next time I'm going to try and make a rhubarb pie!  :)  This was only the first harvesting of the rhubarb, which is growing wild and like a weed back there in the corner.  Just push past the rose bushes and try not to accidently jump into them when you're harvesting because the next-door neighbor's dog barks really loudly right next to you.

Overall though, I think my favorite thing about the rhubarb (& grapes and apricots last year), is that we didn't plant them, or take care of them, but we're the only ones who want to eat and use them.  It's so nice getting food for free from our landlord!  Picture time:

Finished rhubarb jam.  We only made 1/2 the recipe (3 cups chopped), so we only got a few bottles, but Ryan and I don't eat much jam/jelly so this'll last us for a while.

Washing the rhubarb.  It was snowing while we were making the jam on April 30th!

Cut up into little pieces, the recipe didn't say how small to cut them up, but I don't think we made them too big at least.  It's just a chunky marmalade.
Simmer and boil until done!
Rhubarb and orange mush, before the rhubarb went all soft and mushy too.
